The Science of Excellent Maturation

- Cask Selection: Selecting the right wood, the right finish, the right size of cask and leaving it in there for the right amount of time takes experience. All of these factors work in tandem with the spirit, and depending on what cask type you have selected can impart notes of vanilla, spice, apples, floral notes, the list is endless. Our management ensures this interaction is nurtured, not forced. Regular checks, regauging and reracking into fresh wood are all part of our cask management and cask storage process.
- Refinement and Cask Maturation: Time is the most expensive ingredient in whisky. Our facilities are designed to protect that investment, allowing each cask the time it needs to reach its peak potential. This could take 5 years, it could take 25 years. Our dedicated warehouse team monitor these casks, draw samples where requested and can re-rack into fresh wood if necessary.
